Roughly chop the mixed nuts and pumpkin seeds into smaller pieces.
Grind the flax seeds and hemp seeds in a small blender or coffee grinder. This is an important step — whole seeds pass through the body largely undigested, so grinding them unlocks all the nutrients.
Grate the apples directly into a large bowl or jar.
Add all the remaining ingredients — oats, seeds, nuts, psyllium husk, quark and milk. Stir everything together until well combined. Add more milk if you prefer a thinner consistency — it's entirely down to personal preference.
Cover and refrigerate overnight, or for at least 4–6 hours.
Serve cold, drizzled with honey and yogurt.
