Bircher Overnight Muesli

Ingredients
  

  • 10 tbsp oats (I mix rye and wholewheat and fine oats)
  • 30g mixed nuts
  • 2 tbsp chia seeds
  • 2 tbsp flax seeds (ground)
  • 2 tbsp hemp seeds (ground)
  • 2 tbsp sunflower seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp psyllium husk
  • 2 medium apples, grated
  • 250g quark or 400g white yogurt (or a mix of both)
  • 300ml milk of your choice
  • Honey to serve

Method
 

  1. Roughly chop the mixed nuts and pumpkin seeds into smaller pieces.
  2. Grind the flax seeds and hemp seeds in a small blender or coffee grinder. This is an important step — whole seeds pass through the body largely undigested, so grinding them unlocks all the nutrients.
  3. Grate the apples directly into a large bowl or jar.
  4. Add all the remaining ingredients — oats, seeds, nuts, psyllium husk, quark and milk. Stir everything together until well combined. Add more milk if you prefer a thinner consistency — it's entirely down to personal preference.
  5. Cover and refrigerate overnight, or for at least 4–6 hours.
  6. Serve cold, drizzled with honey and yogurt.
