This recipe is a little self-explanatory, but sometimes we all need to see something to be inspired. That’s exactly how I came to it — I stumbled across an Instagram post about Bircher muesli and have been eating the same breakfast almost every day since.
I know eating the same thing every day isn’t always advised, but bear with me. The combination of seeds, nuts and grains in this bowl is so genuinely nutritious that it really doesn’t matter. I do try to switch the fruit up at least — traditionally it’s made with apple, but any fruit works beautifully. I also alternate between quark and white yogurt, or mix both together. A spoonful of cocoa powder or a pinch of cinnamon stirred through takes it somewhere else entirely.
I’m sharing this recipe mainly because it helped me heal my gut in a way nothing else had managed. After starting antidepressants I struggled with ongoing gut issues for well over a year. Fermentation and Bircher muesli are what finally turned things around for me.
This is not just breakfast — it is genuinely one of the most nutrient dense things you can eat in a single bowl.
The oats form the base, rich in beta-glucan, a soluble fibre that feeds good gut bacteria, stabilises blood sugar and keeps you full for hours. Adding rye flakes alongside them brings even more fibre and a lower glycemic index than oats alone.
The seeds are where the real magic happens. Chia seeds soak up liquid overnight and form a gentle gel that soothes and coats the gut lining, while also delivering omega-3 fatty acids and plant protein. Flax seeds are one of the best plant sources of omega-3 available — but grinding them first is essential, as whole seeds pass through the body largely undigested. Hemp seeds are a complete protein, meaning they contain all essential amino acids, plus magnesium and healthy fats. Sunflower seeds bring vitamin E and selenium, both powerful antioxidants great for skin and immune health, and pumpkin seeds are rich in zinc, magnesium and tryptophan — which supports serotonin production and better sleep.
Psyllium husk is perhaps the most underrated ingredient in the whole bowl. It is one of the most powerful natural sources of soluble fibre you can find, exceptional for gut motility and actively helping to heal the gut lining over time.
The quark or yogurt brings live cultures that feed your gut microbiome directly, and the grated apple contributes pectin — a prebiotic fibre that beneficial gut bacteria absolutely thrive on.
Every single ingredient in this bowl is doing something good for you. That is a rare thing. 🌿

Method
- Roughly chop the mixed nuts and pumpkin seeds into smaller pieces.
- Grind the flax seeds and hemp seeds in a small blender or coffee grinder. This is an important step — whole seeds pass through the body largely undigested, so grinding them unlocks all the nutrients.
- Grate the apples directly into a large bowl or jar.
- Add all the remaining ingredients — oats, seeds, nuts, psyllium husk, quark and milk. Stir everything together until well combined. Add more milk if you prefer a thinner consistency — it's entirely down to personal preference.
- Cover and refrigerate overnight, or for at least 4–6 hours.
- Serve cold, drizzled with honey and yogurt.
