Rich and chewy spiced hot cross buns made with earl grey and rum soaked raisins, warming spices and orange zest. Served with a homemade ginger orange jam that mirrors every flavour in the bun. A proper Easter treat with a twist.

Ingredients
  

Tea-soaked raisins
  • 150 g raisins
  • 2 earl grey tea bags
  • 50 ml rum
  • 150 ml Boiling water to cover
Dough
  • 500 g strong white bread flour
  • 150 g golden caster sugar
  • 8 g fast-action yeast
  • 2 tsp ground ginger
  • 2 tsp cinnamon
  • ΒΌ tsp grated nutmeg
  • Pinch of salt
  • 2 large eggs
  • 150 ml whole milk lukewarm
  • 50 ml rum
  • 2 oranges zested (keep the fruit for the jam)
  • 75 g melted butter
Cross paste
  • 40 g plain flour
  • 40 ml water
Ginger orange jam
  • Reserved raisin soaking liquid
  • 2 zested oranges pulp and juice
  • 200 g fresh ginger
  • 200 g sugar
