Masala Beans on Toast

Butter chicken flavours, no chicken required.

This spiced beans on toast is one of those recipes that sounds too simple to be exciting and then completely surprises you. It is rich, warming and packed with flavour — and it comes together in under 30 minutes with mostly pantry staples. If you are a fan of butter chicken but are looking for a plant-forward alternative, this one is for you. And if you have never thought about putting masala spiced beans on toast before, well, here we are.

Why Is This THE BEST

The secret is in two things. First, the spices. And second, the blending trick that turns a simple bean and tomato stew into something that feels genuinely indulgent without a drop of cream in sight.

I also serve it over sourdough toast with a dollop of cold yogurt and a boiled egg on top. The contrast of the warm, spiced beans against the cold yogurt and the crunch of the toast is what makes it. Do not skip the yogurt — it is doing a lot of heavy lifting here.

The Spices and What They Do

This spiced beans on toast uses a combination of turmeric, cumin, ground coriander, ginger, chilli and paprika. Together they replicate the warmth of a classic butter chicken sauce. However, each one also brings something to the table beyond just flavour.

Turmeric is well known for its anti-inflammatory properties, and because this recipe also uses black pepper, your body can actually absorb the curcumin from the turmeric properly. Ginger is great for digestion. Cumin and coriander add a deep earthiness that rounds everything out. And the paprika — added last and fried for just a few seconds — brings a subtle sweetness that ties the whole sauce together.

A word of warning on the paprika: add it at the end and watch it closely. It burns faster than you think and will turn bitter the second it does.

The Blending Trick

Rather than adding cream or coconut milk to thicken the sauce, you take about a third of the mixture and blend it with walnuts or cashews. Then you stir it back into the pan. The blended beans create a natural creaminess and the nuts add richness and a slight depth that makes the sauce feel like it has been cooking for hours. Because this is a great option for anyone avoiding dairy or simply wanting to keep things lighter, while still getting that satisfying, creamy texture.

Walnuts give a deeper, slightly bitter richness. Cashews keep it milder and smoother. Both work beautifully — it just depends on what you have on hand.

What to Serve It With

I serve my spiced beans on toast over thick sourdough, but honestly any bread works. A good crusty white, a seeded loaf or even a flatbread if that is what you have. Top it with a spoonful of cold plain yogurt, and a soft boiled egg if you are feeling fancy. The egg adds protein and makes it a proper meal rather than a snack.

A Note on the Beans

Any white bean works here — cannellini, butter beans, haricot. I have also made it with chickpeas when that was all I had and it was equally good, just slightly more texture. The point is flexibility. This recipe is designed to work with whatever is sitting in your cupboard.

Butter Chicken Beans on Toast

Ingredients
  

  • 50g butter
  • 1 medium onion, sliced
  • 2 garlic cloves
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp ginger
  • 1 tsp chilli
  • 1 tsp paprika
  • 1 bay leaf
  • 1 can of beans, drained
  • 400g canned tomatoes
  • ½ cup walnuts or cashews
  • Salt and black pepper to taste
  • Toast, yogurt and a boiled egg to serve

Method
 

  1. Melt the butter in a pan over medium heat. Add the sliced onion, garlic and bay leaf. Fry gently until the onion softens and becomes fragrant.
  2. Add the turmeric, cumin, coriander, ginger and chilli. Stir into the butter and fry for a few minutes. Then add the paprika and fry for just a few seconds, stirring constantly. Be cautious here — paprika burns quickly and will turn bitter.
  3. Add the canned tomatoes and beans. Season with salt and black pepper. Stir everything together and let it simmer for about 10 minutes until it starts to come together.
  4. Take about a third of the mixture out of the pan and blend it together with the walnuts or cashews until smooth. This is what thickens the sauce and gives it that creamy richness without any cream.
  5. Transfer the blended mixture back into the pan and stir to combine. Let it cook together for a few more minutes until the sauce is thick and everything is well incorporated. Taste and adjust with a spoon of sugar if needed.
  6. Spoon generously over toast and top with a dollop of yogurt and a boiled egg if you fancy it.

Notes

The blending trick is the secret here — it thickens the sauce naturally using the beans themselves, no cream or cornstarch needed. Walnuts add a deeper richness, cashews keep it milder and creamier. Both work beautifully.
